What kind of pork will I receive?

In a previous post we explained in total how much pork an average half pig or quarter pig order would yield.  Here we delve into what cuts of meat make up the order. 

Half Pig Order - this order can be standard (we fill out the cut sheet and decide what is smoked and what is fresh) or customized (you fill out the cut sheet with our help and decide exactly what you want

  • 6-7 pounds of ground pork (plain, hot Italian, sweet Italian or breakfast) we try to provide at least one package of each kind depending on what we have available.
  • 2 spare ribs
  • chine roast or chops
  • pork roast or country style ribs
  • ham hocks
  • feet
  • 18-20 pork chops (we get them cut to 1" thick and put two per package)
  • 10-12 pounds of thick cut bacon or a pork belly (fresh or smoked)
  • 2 hams (fresh or smoked)
  • 2 shoulders (fresh or smoked)
  • 2 ham steaks (fresh or smoked)
  • 2 shoulder steaks (fresh or smoked)
  • back fat
  • leaf lard

Quarter Pig Order - this order includes standard cuts, but you can let us know if you would like all the pork fresh or to have some smoked.

  • 3-4 pounds of ground pork (plain, hot Italian, sweet Italian or breakfast) we try to provide at least one package of each kind depending on what we have available.
  • 1 spare rib
  • chine or pork roast
  • ham hocks or feet
  • 8-10 pork chops (we get them cut to 1" thick and put two per package)
  • 5-6 pounds of thick cut bacon or half a pork belly
  • 1 ham (smoked or fresh)
  • 1 shoulder (smoked or fresh)
  • 1 ham steak (smoked or fresh)
  • 1 shoulder steak (smoked or fresh)
  • back fat or leaf lard

These quantities are estimates because the quantities of cuts are dependent on the size of the pig.
